Fresh vs. frozen?

We have (more than once) tried a frozen goose next to a fresh goose and never found a difference in taste or texture.  We believe this has a lot to do with the layer of fat the geese have and how the meat has such a different texture than say chicken or fish, that it just does not have the drop in taste and mouth feel that freezing does to some other meats.  Also, we feel our flash- freezing method lends to this.
