Capon - Not Your Average Chicken

A chicken is just a chicken, right? Not necessarily - a Capon is not your average chicken. Some even call it the 'Super Chicken', due to its rich and tender flavor. Capon is essentially a rooster that is gelded, or surgically neutered at three weeks of age to neutralize the muscular development of the bird. This centuries-old technique contributes to a plumper and juicier bird which also improves the texture compared to a traditional roast chicken.

Additional Information:
Our capons are well-fed until approximately 16 weeks until they weigh 10-13 lbs. This is double the lifespan of conventional chickens,making the birds a special dinner centerpiece throughout the entire year.

The long growing process naturally produces a high-weight bird with well-marbled meat.

Roasting Instructions:
  • Thaw in the refrigerator for 1-1½ days or in cool water for 4-6 hours.
  • Preheat oven to 325°F.
  • Remove leg binding to open body cavity. Remove neck and giblet package from body cavity, cook for stuffing or refrigerate until ready to use.
  • Rinse and drain capon.
  • Salt if desired.
  • Place capon, breast side up, on rack in roasting pan.
  • Cover roaster and place in pre-heated oven.
  • Allow approximately 25 minutes per pound cooking time for an unstuffed capon*.
  • Uncover capon for the last 45 minutes of cooking time to brown, or until desired color and meat thermometer registers 180-185°F. Legs should move easily in their sockets.
  • Allow to cool slightly before carving.
  • Refrigerate leftovers.

*Dark cookware may shorten cooking time.

I grew up on a farm. We raised chickens, and some capons. Haven’t had a capon since then. This capon was so juicy and flavorful. Better than I remembered. Thank you.

Bird came as promised ...we always eat Capon for the holidays ....this was my first time ordering from Schiltz  and I was very impressed with the product ...cooked beautiful...and tasted so juicy...thank from my family to yours...

The 11-pound capon we ordered from Schiltz arrived in perfect condition and on the day promised. After several days of refrigerator thawing, the big bird was ready for roasting on the morning of our big dinner. The meat was succulent, moist, and tasty! We used to have capon when we were kids, but it's hard to find nowadays. We are very glad for Schiltz and will be ordering again soon!
