KEEP BIRD FROZEN UNTIL READY FOR OVEN!
Re-Heating Instructions
- Preheat oven to 375F
- Place frozen bird on a rack in a roaster (don’t remove the
leg/wing ties; they’re ovenproof and will keep the bird in position for best presentation).
Place ½ to ¾-inches of water in bottom of roaster to eliminate smoking. Water must
remain in pan during entire roasting process.
- Roast, uncovered. Because ovens vary we recommend
checking the pop-up timer after
75-minutes of cooking time. Time will vary according to size of
bird.
- As soon as the timer pops up – internal temperature
should be 150F on thermometer - remove goose from oven to cool. Allow it to rest for 15-minutes before

Instructions
- Remove and discard the leg and wing ties.
- Remove wings by cutting around the wing at the second joint.
- Remove remaining wing drummettes. Dislocate the joint by pulling
upward, then cut through joint to remove.
- Remove leg and thigh by cutting down crease between goose body and
drumstick.
- Grab leg and dislocate the joint by pulling up on the leg. Cut
through joint to remove the leg and thigh.
- Starting at the neck end of the bird, remove breast halves by
inserting knife along side of the breast bone down to the breast
plate. Slide knife along the entire length of the breastbone, then
remove breast half in one piece by filleting the meat from the bone,
lifting the breast as you go.
- Slice breast meat into ¼ - ½ inch slices,
CUTTING ACROSS THE GRAIN
(not the long way).
- Remove meat from leg and thigh by holding leg tip and slide knife
down leg bone cutting away from you. Rotate leg and continue to
slice along the bone until all of the meat is removed.
- Remove wing meat by sliding knife between wing bones.
- Remove meat from remaining drummettes as done on legs.
- Carve remaining meat from the back of bird by sliding knife blade
along bones.
