while i an impressed with the speed and care taken to deliver my order; i was  a little disappointed in not seeing a true weight  displayed of the goose i purchased. i know that it was between 12-14# but to have the actual weight displayed somewhere would have been nice in order for me to correctly prepare it.

Decided to forego turkey and indulge in a Schiltz young goose this Thanksgiving.  The Mrs. and I spent all day preparing this feast for just us.  Goose with wild rice stuffing, holiday dressing with cornbread and lamb sausage, and spinach mashed potatoes with sour cream and dill.
(OK, we cheated on the Pecan Pie - it was store-bought.)

My doctor is going to kill me but every bite was worth it.

Wouldn't have been possible without Schiltz!
This goose was beyond incredible.
We'll be back.

The goose was bought as a gift, my in-laws always have a Schiltz goose for Christmas dinner.  We are sure it will be excellent like always.  Tell every one Hi especially Linda!

Boned goose roulade November 21, 2016

I bone out the goose, add the deboned goose breasts and stuff with a savory stuffing for a perfect, easily sliced roulade.  My family thinks it's the pluperfect Thanksgiving meal.  And the carcass makes the stock for the stuffing and gravy ahead of time.  Best leftovers, if there are any, ever!

Very fatty and thin November 15, 2016

We love wild and domestic ducks and geese.  The rich fat and firm meat are so far superior to factory chickens.  This goose was tasty, but a bit skinny on meat.  Oh, so very fatty.  I did not weigh it but once cooked, there was a least twice the volume of fat in the bottom of the pan as there was meat on the bird.  Sliced only 1/4 inch thick, the breasts yielded only 3 slices each.  The bird was obviously raised to be quickly fattened up so it could be sold by weight.  Flavor was good though.  Would not recommend.
